It’s great to have Ben and Julia from Rethink Cooking back at the farm, scouring the fields and farm shop to create delicious, inspiring and low waste meals from our seasonal produce.
Ingredients:
¼ cup rhubarb, chopped
¼ cup yellow bell pepper, chopped
¼ cup mango, chopped
¼ cup red onion, chopped
¼ cup apple, chopped
1 tbsp coriander, chopped
1 tbsp honey
Juice of 1 lime
Salt and pepper to taste
Chopped jalapeno pepper to taste (more = spicier)
How to:
- Blanch chopped rhubarb in boiling water for one minute then plunge into ice water to stop it cooking.
- Add all the ingredients into a bowl and mix. Let it sit for 30 mins prior to eating.
- Serve with tortilla crisps or with our chicken, avocado, and creme fraiche tacos.
