Chocolate and Courgette Cake

We have a glut of courgettes in the veg patch right now - something to do with all that crazy heat...

The courgettes and oil make this a brilliantly moist bake, and if you’re worried it will taste like vegetables – it won’t! A great way to sneak some extra greens into your children’s diet.
Ingredients:
  • 150g sugar
  • 100g butter or margarine
  • 75ml oil
  • 2 eggs
  • 125g sour cream 
  • 290g plain flour
  • 240g courgette, grated (3 small courgettes)
  • 1 tsp vanilla
  • 4 tbsp cocoa
  • 1 tsp bicarbonate of soda
  • ½ tsp cinnamon
  • ½ tsp salt
  • 100g chocolate, chopped
Method:
  1. Cream the butter.
  2. Add the sugar and oil.
  3. Add the eggs, vanilla and sour cream.
  4. Sift in the dry ingredients.
  5. Stir in the courgette.
  6. Spoon the mixture into a cake tin or 9×13” dish.
  7. Sprinkle the top with the chocolate.
  8. Place into a preheated oven at 170°C for 40-50 mins, or until a knife comes out clean.
    If the top is cooking too quickly, cover with some baking parchment.
  9. Top with icing, or enjoy with cream! 
Top with icing sugar or buttercream frosting if you’re feeling extra decadent…
