Breakfast Potatoes

Start the day with spuds! This pairs perfectly with a scrambled egg!

Ingredients

1 potato per person, cut into cubes

Veggies of choice cut into similar size cubes. We had pepper and onions but courgette and mushrooms would be good additions as well. 

Oil

Salt 

Pepper 

Paprika 

Mixed herbs 

 

How to:

  1. Preheat the oven to 180°Cfan
  2. Put all the veg in a bowl and drizzle with oil and seasonings. Toss until coated. 
  3. Place on a lined baking tray in a single layer and cook for 30-35 mins or until the potatoes are golden brown and crispy.
