A fresh asparagus and prawn pasta - the perfect spring lunch

It’s great to have Ben and Julia from Rethink Cooking back at the farm, scouring the fields and farm shop to create delicious, inspiring and low waste meals from our seasonal produce.


2 servings pasta of your choice

150g king prawns, fresh or frozen

150g asparagus, chopped

Juice of 1 lemon

50g parmesan cheese/grana padano cheese

1 tsp oregano

¼ tsp salt, pepper, and chili flakes. 

2 cloves garlic, minced

25g butter

100ml pasta water 


How to:

  1. Cook pasta in salted boiling water according to package instructions. 
  2. Heat a frying pan over medium heat with butter. Once melted, add the asparagus and cook for 5 mins. 
  3. Add salt, pepper, chili flakes, and oregano. Add prawns and garlic to the frying pan and cook for 2 mins. 
  4. Add lemon juice and pasta water and stir to combine. Add pasta and toss. 
  5. Enjoy!
